So, I used it twice and then all of a sudden it’s saying that AI-Writer is only available on Pro and up plans (not basic). I don’t see this anywhere on the sign up page tables describing the differences between the plans, so why is this the case? I was really looking forward to filling my blog with this feature.

We wish we could make all widget features accessible to everyone, no matter of the plan, but the AI functionality comes with considerable expenses on our side. It’s a costly feature to maintain, which is why we’ve set some restrictions based on the different plans.
We really wanted our free-plan users to try it out too, so we opted to provide a limited version instead of leaving it out entirely. This is why, only 3 generations per widget are available on the Free and Basic plans. I hope you can understand our reasoning behind this decision.
As for the AI Generation info, it’s already included on the pricing page:

Gotcha. I upgraded and the in app pricing tables don’t show this the same as your website.

Since you have a Pack plan, I guess you could check the Pack prices, where there is no info about the Blog limits.
However, if you check prices for the Blog widget not only from our website, but also from your Elfsight dashboard is also included there

I’ve checked your account and see that it still has only the All Apps Basic Pack subscription. You can make sure of it in the Billing section in your dashboard:
Is there a chance the new subscription might belong to a different account?
