IN the snip below, how can i hide all the sources of review and only show the all reviews tab, or none at all and just the reviews listed from all sources

To hide tabs, you just need to click on Tabs section on the Layout tab and disable Show Tabs setting:
Also, I’d like to let you know about Group Source by platforms option. This way, you’ll have only one
Google tab:

A question thought about tabs, is there a way to create our own tabs with filters in them, eg with a persons name ie “Clint” that when clicked only show reviews with that word in, almost like the filter inherrant to exclude certain names.

You can change the name of the tab on the Source Name field:
However, unfortunately, there is no option to apply filters to a specific source, they are applied to all the sources.
We already have such a request in our Wishlist. You can vote for this feature to get a notification upon its release - Filter specific reviews by source.
