I would really like my pricing to stack vertically on mobile, so as it used to be (and in my opinion is more intuitive). Where do I find this option?

Sure, I’ll be happy to assist you with the customisation! So that we’re on the same page, could you please describe what you have in mind for your Pricing Table? Do you want the vertical scroll or something more complex?

The pricing table is for the “Pricing” page I’m currently building on my Squarespace site:

It’s specifically meant for the “Kleurenanalyse” (colour analysis — the one with the drapes, you might know it).
As you can see, there are three factors that influence the price:

The number of people attending the session (1, 2, or 3) — listed in the header column

Whether the session is booked on a weekday or in the weekend — also in the header column

Whether the client chooses the standard (Essence) or premium (Plus) session — these are the two separate columns
Currently, on mobile, “1 person weekday” etc. is nicely shown above the corresponding price — I love that and would like to keep it! 
The only thing I’d like to change is the layout:
I’d prefer the columns to be stacked vertically (like the white blocks under “Personal Styling”), so users can scroll down to compare options. My audience mainly visits the site on mobile (about 80%) and isn’t very tech-savvy, so I’m worried the current layout is confusing or unclear to them.

And thanks for the extensive explanation! I got your idea and brought it to the devs. After they checked our customisation capabilities, they came to the conclusion that, in order for this to look right, we need to add a whole new layout to the widget, unfortunately.
So I went ahead and added your idea to our Wishlist: Add vertical column stacking on mobile. You’ll be notified of the progress there, so let’s cross our fingers that the team considers it soon

Thank you for your reply and for adding my suggestion to the Wishlist. Unfortunately, I purchased the widget specifically for the purpose of having a mobile-friendly pricing table with vertical stacking. My web designer, Ys-brand, had successfully used your widget for a client’s site (see this example
https://www.nlockd.com/pricing), and based on that, I decided to purchase it as well.
Since the widget no longer behaves that way on mobile and I can’t use it for my business, I’d kindly like to request a refund of €41,74 for this purchase.

I totally understand your case, and I am really that the current mobile view doesn’t meet your needs!
Just in case, I’d like to let you know that it’s possible to stack columns vertically with the Grid layout. However, it doesn’t support the Head Column feature.
Here is how it looks:

Thanks for the suggestion, unfortunately within this grid layout the factors that determine the prices are not visible (number of people attending the session and weekdays or weekend-bookings…). Is it possible to send this e-mail to the support team that can help me with the refund?
