For the map, would love to be able to hide the hours in the full store list view and not the popout

You can find this option right in the settings. Just click the Customize button on the Directory tab and disable Open Status

Hi, this is good for the location strip listing, but the expanded listing still shows open/closed. How can I turn it off for both displays?

You can hide the business hours in the popup in the Detailed Card section on the Directory tab:
