Would be great if email sent to winner and to owner was one we can input ourselves over the Elfsight that is currently being sent.

You’d like to have an option to change the text of the notifications sent to the widget owner and prize winner, right?
If this is the case, we already have a request for the notification sent to the winner. You can upvote it here - Prize Notification Email Edit.
And this request will be dedicated to the custom notification sent to the widget owner.
However, if I misunderstood your idea, please describe it in more detail
