Currently if I don’t want my announcement bar-widget being displayed for a period of time, I have to select the background to transparent and text to white.
Is there a way we could have a ‘one-click’ way to effectively ‘un-publish’?

Sure! You can hide the widget on your website right from the dashboard. Just click 3 dots next your widget and choose Hide from Website:
Also, I’d like to remind you about the Schedule option on the Settings tab. Here, you can set the date and time when the widget will be displayed on the website:
However, I’d recommend you using the Hide from Website feature. This way, the views won’t be counted when the widget isn’t shown on the pages
