I want to be able to hide the number of google reviews I have from Google Review Widget and just say “Read Our Reviews” or put custom text.

The good news is that this option is already available in the settings. For this, you should go to the Settings tab, open the Edit Texts section and replace {{number}} reviews with your custom text:
