I think it would be a great idea to have a user see a message after entering their email on a popup saying we recieved their email or thank you for subscribing.

Thank You message after form submission is available in Popup now! 
This is where you can find this option:
- Go to your widget Builder tab
- Add Form block
- Choose Submit Button section
- Change Title and Text fields if needed
